By Kim Yang When the tip of your tongue gently touches its frosty yet smooth texture, you can feel your heart pumping, brain congealed, movements slowed and all you want to do at this moment is to simply enjoy the sensation it provides. Ice cream, being one of the most popular desserts ever, has a charm so incontrovertible that makes us enjoy the pleasure it gives when tasting it. It is so popular that the poet Wallace Stevens once wrote “ The only emperor is the emperor of ice cream.” What is it that makes ice cream so appealing? Is it because of the look? The texture? Or the flavor Manufacturers worldwide have been trying their best to satisfy our appetite, they have created all kinds of ice cream with colorful look, rich texture and miscellaneous flavors. They created special technique which swirls a different ice cream flavor into the basic ice cream. Such as the “Uncanny Cashew” by Ben&Jerry, they swirls caramel into the sweet cream ice cream and makes it look more colorful and alluring. Also, there are ice creams which are made from fruits, oftentimes the manufacturers would add pigment to them and make them look fresh and delicious.
The texture is also a major cause to the charm of ice cream. Ice cream is made from cream, combined with flavorings and sweeteners. Reducing the temperature while stirring the mixture prevents large ice crystals from forming. The creamy and silky texture is produced with the air incorporated during the whipping process which evenly stirs the ingredients. However, ice cream which contained too much air is often lighter and cheaper for it uses only half of the ingredients. So don’t blame Haagendazs for being so expensive, they’ve got a good reason for it. The flavor is undoubtedly the key point to the success of ice cream. Ice cream seems to be able to trigger chemical reaction inside our mouth and entice us into having more and more of it.
